Description:
The grapes are de-stalked, then a maceration of 2 weeks for the Malbec and 5 days for the Pinot noir and Gamay will follow. After the maceration, the wine is taken from the vat. The free-run wine is separated from the press wine. The malo- lactic will stabilize the wine and makes it supple. The wine must be then racked up to 3 times.
