Description:
The wine that is to be used for this process is chosen carefully for its delicacy. The wine is bottled with 20 gr of sugar being added to each bottle. A secondary fermentation then occurs, lasting 2 months. The wine is left in the bottle to age for 15 months on its yeast sediment. Then , the operation of “remuage” will last 2 months and the bottle is disgorged. Before re-corking the bottle, we top up the bottle,adding a litlle wine- and- sugar mixture which,depending on the strength of the quantity added will give its bone-dry. (“brut”)
